Shinbashi: There was a time when this city's catch of the day got flown straight out of town. That was back when the 'big fish' in the sushi biz were based in Japan—all of them were male. But lately, the tides have been turning, and New Yorkers who know their maki make their way to the newly incarnated Shinbashi in Midtown, where female Japanese chef Chie Shirahata (of Nobu and Momoya), has been given the reins. Here, customers expect their fatty tuna to be first class, no small feat in the competitive world of NYC sushi. While the real connoisseurs pony up at the bar for the house special - Shinbashi Omakasi - you might want to sample first rate sakes like Hakkaisan or Dewazakura as well. The house special sushi will kick the kimono off anything on the other side of the Pacific. Shinbashi benefits equally from the high traffic of sushi-savvy Japanese business people, so if you're in doubt about what to order, just point to their plates and say, "I'll have what he's having."
