He got Nobo 57 pal Motonari "Moto" Matsunaga, and Takaho Mori, former head chef at Megu, AND Miku Suzuki, who was most recently head chef at Onigashima, to join him at his new East Village restaurant, Le Miu. The menu runs the gamut from traditional to contemporary Japanese cuisine: spicy pepper miso soup, sea urchin with soy gel, and lobster ceviche are just a few of the menu choices.
