Archipelago: If you've watched the original Iron Chef, you know the Japanese are obsessed with French cooking. So it's not much of a leap that Hisanobu Osaka, a former consultant for Iron Chef, opened a Japanese-French bistro. Also former sous chef of Morimoto, Osaka offers three-course meals that combine Japanese ingredients with French techniques. Dishes include tuna tartare with wasabi cilantro remoulade, panna cotta with lobster and fresh uni, and rouget confit sandwiched with garlic foam and a parsley emulsion. A manga mural by Hiroki Otsuka, one of Japan's premiere comic illustrators, puts a decidedly pop culture twist on the otherwise Euro-style dining room in the former Dani space. |
