When the mojito became the new cosmo in NYC a few years ago, it was only natural that it’s sister libation, the caipirinha, would take the city by tropical storm as well. Pronounced “kie-pur-reen-yah,” Brazil’s national cocktail is made with crushed limes, sugar, and the national spirit—cachaça (“ka-sha-sa”). Unlike rum, which is usually made from molasses, cachaça is made from fresh sugarcane juice that’s fermented and distilled. With an alcohol strength between 76 and 96 proof, cachaça will kick your senses straight to the white sandy beaches of Copacabana in no time. Even though it’s not a Brazilian joint, this Spanish-Mediterranean tapas eatery serves up the ideal summer drink, the Agua Fresca (cachaça, melon liquor, fresh watermelon, pineapple and lemon juices), as well as a mango “caipajito” among its rum-heavy cocktail menu. Given the romantic candlelit décor, you’ll feel more than relaxed after sipping on a few of these—just don’t fall asleep on the Moroccan pillows lining the banquettes.
