Cranberry French Toast with Mascarpone

Gone are the days when we would wake up early on Saturday mornings to catch our favorite cartoons while devouring French toast soaked in syrup. As adults, we definitely don’t miss waking up early. But we would love to recreate those yummy, sugar-coma-inducing breakfasts. This Cranberry French Toast with Mascarpone (on delish.com) ups the fruit factor so it’s more nutritious and equally delicious.
What You’ll Need: 2 eggs, 1 cup whole milk, 2 teaspoons vanilla (divided),1 loaf brioche (cut into 1-inch-thick slices), butter or cooking spray, 1½ cups sugar, 2 tablespoons lemon juice, ¼ teaspoon salt, 1 cup cranberries (fresh or defrosted), 1 cup mascarpone cheese & 1 tablespoon confectioners sugar.
What You’ll Do: Heat nonstick griddle over medium heat and preheat oven to warm. In one bowl, whisk eggs, milk and 1 teaspoon vanilla. Soak bread in mixture for about a minute. Grease griddle with butter or cooking spray. Place bread slices on griddle and flip occasionally until golden. Keep them warm in the oven while combining 2 cups water, sugar and lemon juice in a pot over medium heat. Once it’s boiling, reduce heat and let simmer for 1 minute. In another large bowl, whip together mascarpone, 1 teaspoon vanilla and confectioners’ sugar. Remove toast from oven and top with cranberries and mascarpone mixture. Yum!
