Spicy Pumpkin & Balsamic Pizza

Even the pickiest of young eaters could usually be tempted with a simple mini cheese pizza. Years and hundreds more taste buds later, plain cheese just isn’t cutting it for us. Come on now, we want the good stuff! Autumn is finally upon us, so we found an upgraded pizza recipe from Veggieful.com that includes pumpkin hummus. Win win! Here’s how to whip up this Spicy Pumpkin and Balsamic Pizza Recipe:
What You’ll Need: 1 cup pumpkin hummus, 1 small red onion (thinly sliced), ¼ cup pine nuts, 1 cup cherry tomatoes (halved), 2 pizza bases (30 cm in diameter), olive oil, 2 handfuls baby spinach, ¼ cup balsamic vinegar & ½ tablespoon brown sugar.
What You’ll Do: Start off whipping up the balsamic reduction by cooking the balsamic vinegar and brown sugar in a pot over medium heat. Simmer for about 10 minutes until vinegar is burned off (will be thickened into syrup). Take off heat and cool. Next, preheat oven to 390 degrees and grease pizza bases with oil. Make pumpkin hummus. Spoon half the hummus onto each dough. Finally, add toppings (onions, tomatoes, pine nuts) and finish with a drizzle of olive oil. Bake for 10 to 15 minutes. Cut into slices, drizzle balsamic reduction on top, add spinach and dig in!
