Portobello Mushroom & Bell Pepper Sloppy Joes

Speaking of Sloppy Joes, we can’t help but think of the scene from the Olsen twins’ It Takes Two when Alyssa Callaway, the rich twin, eats her first Sloppy Joe at camp and ends up loving it. You may turn into the adult version of Alyssa once you try this Portobello Mushroom and Bell Pepper Sloppy Joes from The Real-Food Diet Mix-and-Match Meal Plan. Hopefully you’ll contain your excitement a little better than she did.
What You’ll Need: 3 tablespoons extra-virgin olive oil, 2 cloves garlic (peeled and chopped), 1 small green bell pepper (cored, seeded and thinly sliced),1 small red bell pepper (cored, seeded and thinly sliced), 1 thinly sliced yellow onion, 1 pound portobello mushrooms (wiped clean, black gills scraped out/discarded and thinly sliced), salt and freshly ground pepper, 1 cup tomato sauce, 2 tablespoons tomato paste, 1 tablespoon Worcestershire sauce, 2 teaspoons chopped fresh oregano, ½ teaspoon Tabasco sauce, 4 toasted whole wheat hamburger buns & ½ sliced jalapeno pepper (optional).
What You’ll Do: Heat 2 tablespoons oil in large skillet over medium-high heat. Add garlic, bell peppers and onion to pan, stirring until soft (about 10 minutes). Add rest of oil and mushrooms. Stir occasionally until mushrooms are soft (8 to 10 minutes). Add a dash of salt and pepper. Next, reduce heat to medium and add tomato sauce and paste, Worcestershire, oregano, Tabasco and ¾ cup water. Cook and stir often so it thickens. Spoon mixture onto hamburger bun and add jalapeno slices on top, if desired.
