We’ll use any reason to indulge in some ice cream, so this Banana Lovers Day, give your go-to summer sweet treat some fabulous banana flavor with these Banana Ice Cream Sandwiches from Pixel Whisk! Swapping out heavy cream for coconut milk lightens the recipe and allows it to lose some calories without losing any of the yumminess. Make your own homemade ice cream with puréed bananas, vanilla bean seeds, full-fat coconut milk, half & hal, brown sugar, egg yolks and salt. Refrigerate ice cream base for two hours, then freeze it according to your machine’s instructions, place it in a chilled container and freeze for an additional two hours. While the ice cream freezes, whip up a batch of peanut butter cookies to use as the bookends of your ice cream sandwich, made simply with softened butter, eggs, vanilla extract and peanut butter, baked for 11 minutes or until golden brown. Let the cookies cool, then use a dry measuring cup to dole out individual portions of the ice cream, scoop them onto a peanut butter cookie and top it with another. Enjoy them asap or freeze them for later, but we doubt these delicious frozen treats will last long enough for that!
