Go Bananas for These Sweet ‘Nana Treats
Banana Whoopie Pies

We here at Shecky’s love a good whoopie pie, especially when they’re flavored with yummy banana and have a vanilla-spiked marshmallow buttercream in between! To make these delicious Banana Whoopie Pies from The Kitchen Prep, whip up a batch of whoopie cakes by mixing a mashed banana, Greek yogurt, softened butter, granulated sugar, light brown sugar, vanilla extract, an egg, baking powder, baking soda and salt. With an ice cream scoop or piping bag, pipe out little round disks of batter (about 1 1/2 inch rounds) on a parchment paper-lined cookie sheet and bake for 12-14 minutes, or until golden around the edges. The filling is simply and simply delicious: combine butter, marshmallow fluff, vanilla extract and confectioners’ sugar in the bowl of a stand mixer, and beat until smooth. Pipe the filling (as much as you like!) into the center of half the cakes, top it with another cake, squeeze to distribute filling through and now—for the best part—eat ‘em up!
