Shrimp Burgers with Chipotle Cream & Coconut Peach Salsa

Burgers are a staple of summer, but why not give the barbecue basic a little makeover by subbing out boring beef for some tasty shrimp? To build this Shrimp Burger with Chipotle Cream & Coconut Peach Salsa from How Sweet It Is, first make a shrimp burger patty by pulsing fresh shrimp (raw, peeled and deveined) and mixing it with egg, panko, garlic, mustard, salt, pepper, paprika, onion powder and basil. Grill the patties until they’re golden on each side, then top it with a yummy chipotle cream (chipotle sauce, sour cream, lime juice and s+p), a few avocado slices and—here’s the kicker—coconut peach salsa, made with ripe peaches, red onion, cilantro, lime juice, salt, pepper and toasted coconut that will make your shrimp burger taste like the most delicious coconut shrimp you’ve ever had. But it’ll be better—because it’s on a burger!
