A Sweet Finale To Your July 4th Celebrations
4th of July Ice Cream Sandwiches

You’ll feel fireworks going off in your mouth when you sink your teeth into one of these hefty 4th of July Ice Cream Sandwiches from Appolinas—literally! That might have something to do with the secret ingredient: Pop Rocks. Yes, those little exploding carbonated candies are the unexpected, tasty toppers to these red, white and blue ice cream sandwiches. To make the sandwiches, simply take blackberry ice cream (for the blue—if your chosen brand is more on the purple side, you can add blue gel food coloring to enhance the blue hue), strawberry ice cream (for the red—similarly, if your variety is on the pink side, add red gel food coloring for a bolder crimson color) and good ol’ vanilla, freeze and cut the ice cream into squares, then freeze again. Bake up square-shaped sugar cookies, dip the long side of each cookie in melted white chocolate bark, then sprinkle with the Pop Rocks. Assemble the sandwiches, take a bite and feel fireworks go off in your mouth!
