Strawberry/Blueberry Galette with Whipped Cream Vodka Pie Crust

You can’t have July 4th without pie, but why settle for the boring ol’ apple variety? Fancy up your Fourth of July pie fare with this Strawberry/Blueberry Galette with Whipped Cream Vodka Pie Crust from Baking Serendipity. You read that right—Whipped Cream Vodka Pie Crust. As in, vodka…in your pie. Mix together your usual pie ingredients of flour, sugar, salt, cold butter and cold water, spiked up with 1/4 cup of Pinnacle Whipped Cream Vodka. Once the mixture turns into a dough, stretch it out in a lightly buttered cast-iron pan, pulling the dough up on the sides. Fill the pie crust with a galette of blueberries, strawberries, sugar, corn starch, cinnamon, salt and one egg white, then fold the dough down on top of the fruit, creating a border of crust. Brush the borders with egg white and sprinkle with sugar. After baking for 35-40 minutes at 400 degrees, top the pretty pie with some vanilla ice cream for a perfect red, white and blue treat!
