Margarita Chicken Pizza

Pizzas are fun to make, relatively easy (depending on if you make your own dough) and tasty! A Margarita Chicken Pizza (heb.com), with its chunky toppings and ton of tomatoes, are usually a crowd favorite. See what dad thinks!

What You’ll Need: 1 tbsp, extra virgin olive oil, 1 pint halved champagne tomatoes, 2 chopped garlic cloves, salt & pepper, 1/2 tsp. crushed red pepper, 3 cups of shredded mozzarella cheese, 1/2 cup sliced basil leaves, 1 pizza dough, 1 cup traditional pizza sauce & 1 bag (12 oz.) fully-cooked grilled chicken breast.

What You’ll Do: Heat a heavy bottom skillet over high heat 3 minutes. Add olive oil, tomatoes and garlic. Stir-fry until tomatoes begin to brown. Season to taste with salt and pepper, add crushed red pepper, then set aside. Combine shredded cheese and basil in another bowl. Heat charcoal or gas grill on one side for indirect grilling (350-400° F), setting grill rack 3-4 inches above coals. Divide pizza dough into 4 portions. On a large oiled sheet pan or tray, shape dough with your hands into an 8 or 9 inch circle. Gently place on warmer side of grill until bubbly until grill marks appear on bottom of crust (about 2 minutes). Turn crust over, then spread on 1/4 cup pizza sauce. Sprinkle 1/3 cup shredded cheese mixture over sauce, then top with 1/2 cup chicken strips, 1/2 cup tomato mixture and 1/3 cup more cheese mixture. Close grill lid. Cook 10 minutes or until cheese is melted and crust is crisp.
