Corn, greens y beans salsa
This is an easy and simple recipe, sure to please your Cinco de Mayo crowd. Oh, did we mention it’s healthy too?! We’re trying to save on cals for those not-so-healthy Coronas! Adding to the awesomeness, this yummy dish will only set you back 10 bucks.
What you’ll need: corn, black beans, cilantro, red pepper, onion, lemon juice and chipotle.
What you’ll do: Mix all ingredients into a large bowl. You can serve them up as a side to your tortillas and guac, or as a dinner option, topped on chicken, fish or carne. Squeeze ¼ cup of lemon juice for that extra freshness. Have leftover avocado from your guac? Chop it up and throw it in!
