Napoleons are notoriously hard to create since they traditionally involve alternating layers of puff pastry and crème pâtissière, topped with icing. That said, Epicurious.com’s Meringue Napoleons with Lime Ice Cream and Blackberries (originally from Gourmet magazine) seems even more challenging. The prep calls for making your own meringues, pureeing your own blackberries (watch out for seeds!) and assembling it all together. The end result apparently got a 100% rating from users, so go for it if you dare!
